Program Description:

Peggy and Michael will give a presentation on the incredible edible Mesquite bean pods. You will learn:

  • How to identify a Mesquite tree
  • When and how to harvest the tree’s bean pods
  • What to do to prepare the pods for milling and for storage
  • How to grind the pods into flour and
  • How to eat them!

You will have the opportunity to taste a bean pod, some freshly ground flour and some treats that Peggy Sue and Mike will make.

Speaker Bios:

Peggy Sue Sorensen of The Desert Kitchen is a wild-foods enthusiast who enjoys helping people discover the edible cactus, trees and weeds that grow around their neighborhood and throughout the valley but often are not recognized as food.

Michael Clow of the Desert Life Ranch is an engineer and entrepreneur who enjoys cooking and baking with edible plants in the desert Southwest.
